Topic: Whether it's food product development, manufacturing, healthcare, fine dining, or casual dining, Culinology® is at work in your kitchen. Coined by the Research Chefs Association (RCA), Culinology® is the relatively new term that describes and formalizes the fusion of two disciplines - culinary art and food technology. Moderated by Tim Bauman, the director of food and nutrition services at Wood County Hospital in Bowling Green, OH, a distinguished panel of food industry experts will explore the increasing role of Culinology® in their own kitchens and how this emerging expertise is defining the future of food. This Webinar is being presented in cooperation with the RCA.

Bob Davis Bob Davis
Bob Davis is an executive chef responsible for research and development with 20 years experience in food service developing all aspects of food and beverage for the casual dining industry. Davis supported store operations at both the corporate and franchise level. In addition, Davis led the creation of over 20 new menu items from concept through testing and implementation for 101 domestic units with sales in excess of $2.4 million per unit and initiated the "Big Idea" menu strategy project to determine where/what the brand will be for our guests in Phase I, II & III of brand alignment.

Janet Carver Janet Carver
Janet Carver, Culinary Group Leader, joined National Starch and Chemical Company in 1990 and has been working in the customer solutions and product innovation division of National Starch Food Innovation for 18 years. Carver is currently managing the company's Culinology® Team which was an addition to the National Starch Technical Team in 2003. As well as working as a food scientist, she acquired her Diploma of Culinary Arts - Pastry & Baking from Peter Kump's NY Cooking School (now known as The Institute of Culinary Education) in January 2000. Carver has been an active member of Research Chefs Association (RCA) for 10 years and is currently serving her second term on the RCA Board of Directors for 2008-2010.

Aubrey Coffee Aubrey Coffee
Dr. Aubrey Coffee has been a lecturer and sensory coordinator in the Department of Food Science and Human Nutrition at Clemson University where she teaches Culinary Fundamentals, Sensory Evaluation, and Culinary Science Laboratories in Food Chemistry, since June 2005. Her research interests involve incorporating sensory science and experimental statistics into food technology/ culinary science education. She also mentors a team of undergraduate researchers investigating the "Evolution of Gingerbread." Besides holding several culinary arts teaching positions; Coffee has worked as a chef at the 1996 Olympics, the Hyatt Regency Hilton Head, Charlotte Marriott Executive Park, and Eli's Catering, in Charlotte, NC.

Timothy Bauman Timothy L. Bauman
Timothy L. Bauman DHCFA, C.D.M., C.F.P.P. has been the food and nutrition services director at Wood County Hospital in Bowling Green, OH, for the past 18 years. Bauman received his bachelor's degree from the University of Toledo in business management and E-Commerce, graduated from the dietary managers program at Owens Community College, and is a certified dietary manager. He is a member of the national board of directors for ASHFSA an affiliate of the American Hospital Association and was the 1998, 1999 and 2001 recipient of the ASHFSA "Chip off the Bloch" Award. Bauman was also the 2006 recipient of the Jacques Bloch award the highest industry award with ASHFSA. He has been published in several foodservice professional magazines and is a regular speaker at major industry seminars and workshops. He is publishing a book titled, "The Food Service Managers Tune-up Book," this summer.

Technical Information
What is a Virtual Seminar and how is it different from a traditional seminar?

A Virtual Seminar is a real-time distance learning tool that combines a conference call with interactive online visuals. All you need is a telephone and a computer with an Internet connection.

How does it work? A toll-free call will access the audio portion of the seminar and you can access the online visual portion right at your desktop. Complete access instructions will be provided a few days prior to the seminar. These access instructions will be emailed to you by KRM Information Services (HFM's technology partner for this event.)

What technology do I need? For the audio portion you can simply use a common telephone (a speakerphone will enable multiple participants to listen). Web conferencing requires at least an Intel Pentium 266 MHz PC running Windows 98, Me, NT, 2000, or XP with at least 64 MB available RAM. Supported browsers include Microsoft Internet Explorer 5.0 or later, Netscape 7 or later, or Mozilla Firefox with Java version 1.5 or later. JavaScript and cookies must be enabled in the browser. A 56K or faster Internet connection is recommended.

Important: You will need to install WebEx Event Manager on your PC (or the PC you plan to use for the Virtual Seminar) prior to the Virtual Seminar's start time. Installation instructions will be included with your program materials and log-on instructions, or you can view them here. If you have any questions or concerns about WebEx Event Manager, please call Customer Service at (800) 775-7654.

My company has a firewall - can I still participate? YES! Different companies have varied security systems in place. You should consult your IT department for questions specific to your operating system.

Can I test my PC before I get my instructions? To test your computer, go to www.krm.com/webextest. Click Setup. Once you receive the successfully completed message, please close your browser.

Important: Please conduct this testing step on the PC you plan to use for attending the Virtual Seminar, prior to the actual Virtual Seminar start time.
