HOSPITAL CHEFS PLACE THIRD IN CATERING COMPETITION
HFM All-Star Chef Team Shines at catersource for Second Straight Year

(New York, NY) April 2, 2008 – The National Society for Healthcare Foodservice Management (HFM) All-Star Culinary Team took third place at the Kitchen Contenders 2008 catersource Chef Challenge in Las Vegas for the second year in a row.

The live cooking competition took place at the Las Vegas Hilton and Convention Center during the Annual catersource Conference & Tradeshow and Event Solutions Idea Factory on Feb. 25. HFM associate member, Cargill, Inc., sponsored the HFM All-Star team at the event.

The HFM team competed against eight other teams consisting of on and off-premise and non- commercial catering teams throughout the country.

The team produced a mouth watering "basil scented pork loin with wax bean pico de gallo, lime cilantro crema, on a sweet yam Ecuadorian pupusa," which also won them third place for the People's Choice Award, making them the only culinary team to win two contests at this year's event.

Each team was challenged to create an innovative cuisine using ingredients selected for them. They were asked to create an hors d'oeuvre recipe that would serve 24 for the competition, and produce 3,000 hors d'oeuvres for the catersource Conference opening reception. Judging for the People's Choice Award was done by the conference attendees at the welcome reception.

The HFM All-Star Culinary team brought together healthcare chefs, including Chef Paul Luttmann, of Avera McKennan Hospital and University Health Center, in Sioux Falls, SD, Chef Karea Anderson, of St. Peter's Hospital, in Helena, MT, and Chef Jaime Palenque of Banner Thunderbird Medical Center, in Glendale, AZ, who won gold, silver and bronze respectively in the 2007 HFM Culinary Competition.

"Coming from a hospital background, I think we took a lot of people by surprise because of who we were up against," said Palenque. "But we knew we had a good recipe and we were coming to win."
